CARBONE: Iconic NYC Restaurant Coffee Table Book
Home
A New York icon is unveiled in the heart of London.
Located at the venerable Mayfair address that was once home to the American Embassy, Carbone London marks the highly anticipated European arrival of one of the modern era’s most celebrated restaurants. Founded in 2013 by Mario Carbone, Jeff Zalaznick, and Rich Torrisi, Carbone has cemented its place as a cultural institution by honoring the Italian restaurants that pulsed with life in 1950s New York City.
As the New York Times put it, “Carbone is a fancy red-sauce joint as directed by Quentin Tarantino, bringing back the punch-in-the-guts thrills of a genre that everybody else sees as uncultured and a little embarrassing, while exposing the sophistication that was always lurking there.” In a glowing review, the late British critic A.A. Gill declared in no uncertain terms, “I love this place.”
The Classics
Carbone breathes new life into the Italian-American culinary traditions that were born in New York City at the dawn of the 20th century. Drawing on childhood memories and skills honed over a formidable culinary career, Chef Mario Carbone presents faithful renditions of the canon while elevating these classics with exceptional ingredients and peerless execution.
The menu at Carbone London encompasses an array of icons, including the Caesar alla ZZ, Octopus Pizzaiolo, Spicy Rigatoni Vodka, and Veal Parmesan. Desserts are an event all their own, ferried through the dining room on a grand tray so that guests can gaze upon the evening’s bounty before making their selections.

The Experience
At Carbone, service captains sporting burgundy tuxedos by designer Zac Posen are the nightly conductors of a glamorous, cinematic experience built on a spirit of over-the-top generosity known as the abbondanza. Their hospitality philosophy is succinctly expressed at the top of the printed menu: A Piacere, or, “As You Like It.”
Central to the restaurant’s theatrical approach is the table-side presentation, which can be glimpsed when ordering the Caesar alla ZZ and Dover Sole Piccata, among several more favorites.
The Scene
Spread across two transportive floors designed by Ken Fulk, Carbone London features several dining rooms and cocktail lounges, along with a private dining suite. The interiors channel mid-century romance and exclusivity, at once capturing Mayfair’s timeless elegance alongside the essence of the Italian restaurants that pulsed with life in 1950s New York City. Key atmospheric elements include velvet banquettes, mosaic tile work, and lacquered woods. Curated by famed Gallerist Vito Schnabel, the restaurant’s artworks include pieces from Rene Ricard, Rashid Johnson, Francesco Clemente, Ron Gorchov, Julian Schnabel, Rita Ackerman, Ai Weiwei, Angel Otero and Lola Montes.
